Oatmeal Pancake - Nancy Clark

Ingredients
1/2 cup uncooked oats1/2 cup yogurt1/2 to 3/4 milk (rice, moo, almond all work)2 egg whites, beaten1 T canola oil2T packed brown sugar1 t baking powder1cup whole wheat floweroptional: cinnamon, fruit, nuts, nutmeg, vanilla
Directions
1. In medium bowl, combine the oats, yogurt, milk. Set aside for 15-20 min (or overnight wrapped in fridge) for oats to soften.

2. When oatmeal is done soaking, beat in egg, oil and mix well.

3. Add sugar and optional spices.

4. Stir baking powder into flour; then add to wet ingredients and stir until just combined.

5. Onto hot, lightly oiled pan, pour about 1/4 cup batter for each pancake. Turn once when the tops are covered with bubbles and the edges look cooked.

6. Serve with toppings of choice. Yield: six 6 inch pancakes, but quantities may depend on dry to liquid ratio and heat of skillet.
