Mayo's Pumpkin pancakes

Ingredients
1/4 cup of libby's pure pumkin 1/4 tsp salt1/4 tsp vanilla extract1/2 tsp baking soda1 large egg white1/2 cup whole grain oat flour1/2 cup skim milk
Directions
First take whole grain oats and process in food process until it makes a flour type consistency. take the flour and add other ingredients. mix well. let stand for 10 minutes. Spray pan with non stick spray. use 1/8 cup and drop dollops into hot pan. cook until bubbles form on top then flip. makes about 8 pancakes. 1 serving is 4 pancakes.
