Chicken and Black Bean Soft Tacos

3 boneless, skinless chicken breast1 can Rotel tomatoes1 can Ortega black beans, drained and rinsed6 Mission Low Carb Tortillas, soft taco sizeground cumin, to tastesalt, to taste
Partially thaw the chicken breasts. Place in small crock pot and cover with the can of Rotel tomatoes. Cook on high for two hours or until chicken is thoroughly cooked. Once completely cooked. Remove chicken from crockpot and shred (I used my Rival mini food chopper). Put back in crock with broth. Add can of black beans. Add cumin for extra kick. Add salt, to taste. Put crock pot on low and simmer until the beans and chicken are hot. Serve with carb friendly tortillas. Add fat free cheddar, fat free sour cream and guacamole for a full Mexican dinner! Makes 8 (or so) tacos.
Variations:
Add 1/2 cup chicken mixture to 1.5 cups salad for a chicken "taco-less" salad.
Serve chicken and beans with Lay's Baked Tortilla Scoops for low-fat chicken nachos.
