Hering Salad German Style

Ingredients
1 piece (1-3/4" x 7/8" x 1/2") Herring1 oz. milk cream0.25 cup apples, fresh, quartered1 medium Dill Pickle (3-3/4" long) 0.25 cup carrots, raw, grated 0.25 cup onions, raw, sliced
Directions
1. Cut the herring in slices and put in a salad bowl.

2. Add the apples, dill, carrots and onions.

3. Pour the milk cream over it and mix well.

4. Put 2 hours in the fridge.


Gives 1 big serving. Serve with boiled potatoes.

    This sounds yummy! Now I just have to go and find herring, the carrots are a new twist, previously unknown to me.... easier said than done. LOL They are terriffic on pumpernickel or German Vollkorn bread or even with potatoes. - 6/15/07
