Ingredients

    1.5c flour
    2 medium eggs
    .5c cold water (or more as needed)
    1.5tsp nutmeg
    1 dash pepper
    2tsp salt
    .7c shredded cheese
    1 Tbsp Oil

Directions

shredd the cheese, put aside
make a smooth sticky dough from the flour, eggs & water. Add Pepper & nutmeg & a dash of salt.
Boil water in a big pot, add half the oil & the rest of the salt.
Now you either need a special pasta tool (Spaetzel presse or Hobel, or a normal pasta press tool).
Grease a casserole dish with the rest of the oil.
Then press the dough into the boiling water. Let the pasta boil a bit, then when it swims on top, remove, drain & put in the casserole dish. This is done in portions. Each portion is layered in the dish & topped with some shredded cheese.
The last layer is cheese. Now stick this either into the oven at 180'Celsius or microwave until the cheese ontop is melted & golden brown.
This can be served either with brown onion rings sprinkled on top & a green salad or a tomato salad.
