Chocolate Flaxseed Muffins

Ingredients
1 1/2 Cups All-purpose Flour3/4 Cup Flax Seed (I usually use the whole seeds, but you can grind it too)1 1/2 Cups Fiber One® Cereal, ground to make 3/4 cup1 Cup Brown Sugar2 Teaspoons Baking Soda1 Teaspoon Baking Powder1/2 Teaspoon Salt2 Teaspoons Cinnamon1 1/2 Cups Shredded Carrots1 Cup Applesauce1 Cup Mini-chocolate Chips3/4 Cup Skim Milk2 Large Eggs, beaten1 Teaspoon Vanilla1 Cup Walnuts, chopped
Directions
Mix dry ingredients. Add carrots, applesauce, chips, and nuts. Pour in liquid ingredients. Do Not Overmix! Fill muffin cups 3/4 full and bake in a 350 degree oven for 15-20 minutes

**I prefer to use muffin papers in my muffin pans
