Ingredients
1/4 cup olive oil1 28 0z. can diced tomatoes2 garlic cloves 2 tbsp. fresh basil3 tbsp. capers1 15 oz. can white beans4 cups fresh baby spinach
Directions
pour olive oil into large skillet and cook over medium heat for one minute. add minced garlic and saute until just browning. add tomatoes and simmer for about 10 minutes. add spinach, basil, beans(drained and rinsed), capers(drained) and simmer for 2-3 minutes or until heated through. serve over whole wheat pasta and top with feta cheese (optional).
