Baked Crab Hushpuppies

Ingredients
3 cans Crab, drained1 cup Whole Wheat Flour1 cup Yellow Cornmeal1/2 cup Scallions1/2 cup Low Fat Buttermilk1/2 cup Light Sour Cream2 tbsp Canola Oil2 Large Egg Whites1 Shallot, diced1 tbsp Thyme1 tsp Baking Powder1/2 tsp Baking Soda1/2 tsp Garlic Powder1/2 tsp Paprika1/2 tsp Cayenne PepperPinch of Black Pepper
Directions
1) Bring all cold ingredients to room temperature before mixing. This should take about 45 minutes.

2) Preheat oven to 400 degrees

3) Spray nonstick cooking oil on a cookie sheet

3) In a bowl, combine cornmeal, flour, thyme, baking powder, baking soda, garlic powder, cayenne pepper, paprika, and black pepper

4) In a separate bowl, combine egg whites, buttermilk, and sour cream. Add cornmeal mixture, mixing just until combined. Do not over mix.

5) Gently fold in crab, shallot, and scallions

7) Roll mixture into 6 balls and brush with canola oil before placing them on prepared cookie sheet

8) Bake for 10-15 minutes
