- Number of Servings: 2
Ingredients
Directions
4 cups chopped chard1 clove minced garlic1 tsp olive oil3/4 cup butternut squash, cubedsalt and pepper to taste
In a 350 degree oven, bake a butternut squash, covered in a pan of 1" water for about an hour until all parts of the squash are soft to the touch. Make sure you don't run the pan dry. Add small amount of water if needed. Cool. Use the rest of the squash for something else, reserving about 3/4 cup. Cube squash and set aside
In 1tsp olive oil, saute garlic. Don't brown. Only saute until it's fragrant, then add chard and saute for a minute. Add water and cover, simmer until tender, about 8 minutes. Add cubed squash and a little more water to prevent sticking. Season with salt and pepper to taste.
