Cozy Lentil Soup

Ingredients
2 slices bacon1.5 cups sliced onion5 oz. lentils1 T chopped garlic2 T tomato paste3 sprigs thyme1 c frozen spinach10 c water
Directions
In a cold pot, place bacon, cut into cm wide pieces, on burner set at medium heat. Render until crispy. Pour off most of the fat. Add lentils, saute until toasty and they release their aroma. Add sliced onions, turn heat to low, stirring occasionally until translucent. Add garlic, tomato paste, and thyme. Bring heat back up to med and saute for an additional minute. Add 10 cups of water, stirring. Bring to a simmer until lentils are tender. Add frozen spinach. Cook until unfrozen. Season with salt pepper and red wine vinegar or lemon juice to taste.
