Kasey's Black & White Chicken Chili

Ingredients
3 Boneless Skinless Chicken Breasts1 Medium sweet yellow onion, chopped2 Cans of Great Northern Beans, rinsed2 Cans of Black Beans, rinsed2 Cans of Diced Tomatoes with Green Chilies3 Tbls. Chili Powder2 Tsp. ground Cumin3 Cloves of fresh Garlic, chopped finelySalt and Pepper to taste
Directions
Use fat free nonstick spray to coat bottom of 8 quart pot.
Brown cubed Chicken breast peices over medium heat until no longer pink. Add chopped onion and garlic to cooked chicken, simmer until onions are soft. Drain and rinse beans in collander, add to chicken.
Add in remaining ingredients, stir thouroughly and simmer on low heat, covered for 45 minutes. Enjoy.

    This is a keeper. I will be doubling/tripling this recipe next time around, like I do many other soup recipes because they're better after freezing.     This is very good and the kids liked it too. We made a pot, froze it and put it in our camping cooler and ate it when it thawed out a few days into our trip and it was better than right off the stove. I also added some extra water to thin it out a bit and liked it better. - 8/1/11

    Very good. I made half the recipe, with 9 oz of chicken (doesn't really say how much). I used 1 T regular chili powder and 1 tsp chipotle chili seasoning = just the right amount of kick. I wanted some liquid (so added 1/2 bottle of beer, but I'm sure stock or water would've been fine too). - 3/6/10
