Mary's Ham Potato Casserole

Ingredients
4 Red or Gold Potatoes ( medium )1 Onion ( chopped)1/2 cup Mushrooms ( diced)1 cup Ham ( diced)1/2 cup Colby or jack cheese ( shredded)1 tbsp canola oil1 tsp pepper1/2 tsp garlic powder
Directions
In a large skillet, heat oil and lightly brown onion. Add mushrrom and potato, brown about ten minutes. Add Ham and seasonings, cover and lower heat. Simmer about 20- 25 mins until potatos are tender. Sprinkle cheese on top and melt ( a few minutes) Great with a salad.
