Cold Soba Noddle Dipping Sauce (Soba-tsuyu)

2.5cup boiling water1/4 cup dried bonito (katsuobushi)5-6 Tbsp soy sauce (I prefer quinoa sauce, but it is hard to get.)5-6 Tbsp mirin
1. Toss dried bonito in boiling water in a pan and cook for 5-10 minutes in low to medium heat without a lid.
2. Turn off the heat and let it sit for about 15 minutes until bonito sink to the bottom of the pan.
3. Drain the broth into a medium size pan and add soy sauce and mirin. When it boils, turn off the heat.
Keep refrigerated. The sauce will last about two weeks in a refrigerator.
