Ingredients
Beans, rice, corn, salsa, chicken and low fat cheese baked between two low fat torillas. Delicious. I usually season my chicken with a little bit of those packet fajita or taco seasonings. a little bit goes a long way. I also like to chop up onion, cilantro, peppers, whatever veggies I have.
Directions
Make a couple cups of wild rice. Grill I chicken breast, chopped. I actually toss one in those ziplock steam bags for 6 minutes. Lay one tortilla in bottom of pie pan, layer in rice, chopped chicken, corn, beans, salsa and cheese. Bake at 375 for about 10 minutes.
