Pumpkin Butter

1c. boiled, drained, mashed pumpkin meat (This is soggier than Libby's canned version.)1t pumpkin pie spice2T splenda
Combine ingredients and microwave on high for 5min. You'll notice a reduction in volume by half. Stir, scraping sides.
I microwaved an additional 2min then 3min--- all this in a stoneware bowl. It came out with a spread thick enough that it slid across the bottom of the bowl (and a plastic measuring cup) rather than sticking.
Yields: 8T, 120g
