Skillet Chicken Teriyaki

6 chicken thighs5 T. soy sauce1/2 C. unsweetened apple juice1 clove garlic, minced1/4 tsp. ground ginger
Spray large skillet with non-stick cooking spray. Put chicken in skillet, skin side down. Sprinkle with 1 T. soy sauce.
Cover, cook over medium heat until liquid evaporated and chicken pieces begin to cook in their own drawn out fat. Cook about 10 to 15 minutes, moving chicken around to prevent sticking, until chicken is well browned.
Drain and discard all fat from skillet.
Turn chicken skin side up. Add all remaining ingredients, cover and simmer until tender - about 40 minutes. Uncover and cook until pan juices simmer down to a thick glaze.
