Yummy Sweet Potato Casserole

4c sweet potato cubed.5c sugar2 eggs.5t salt4T butter.5c milk.5t vanilla.5c brown sugar, packed1/3c flour3T butter.5c pecans, chopped
Preheat oven to 325 degrees F (165 degrees C). Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash.
In a large bowl, mix together the sweet potatoes, sugar, eggs, salt, butter, milk and vanilla. Mix until smooth. Transfer to a 9x13 inch baking dish.
In medium bowl, mix the sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.
Bake in the preheated oven 30 minutes, or until the topping is lightly brown.

Made this for Thanksgiving. I cut the white sugar by 1/3 (was still very sweet) and browned some marshmallows on top. It was a hit! Doubling recipe? Double cooking time and reduce temperature by 15*. Add marshmallows if using and return to oven to brown.Will make again next year! - 12/1/13

I do not like sweet potatoes either, until I tasted this yesterday. OMG! Almost like eating a pie...had to find out how much damage I did to my program!!
