Soy gravy

Ingredients
4 tbsp Canola oil3 tbsp flour1 1/2 cup soy milk
Directions
Make a roux with the oil and flour. Don't let the flour get dark, because this is a white gravy. When the roux is formed, add the soy milk while stirring constantly.
Continue to mix the gravy working out any lumps, and add salt and pepper to taste. Cook until the gravy thickens.
