Reduced-fat Caesar Salad Dressing

Ingredients
1 clove garlic1 pinch salt2 T. chicken stock1 T. grated parmesan cheese1 T. minced fresh parsley2 t. sherry vinegar1 t. dijon mustard1 t. fresh thyme leave2 T. extra virgin olive oil(optional) 2 anchovy filets
Directions
Makes 6 1-Tablespoon servings. Place garlic clove in a bowl with a pinch of salt. Mash until a paste is formed. Add chicken stock, parmesan (freshly grated from block), parsley (can use 1/3 Tablespoon dried), sherry vinegar, dijon mustard, and thyme (can use 1/3 teaspoon dried). Optionally, add 2 anchovy filets, rinsed, patted dry, and mashed to a paste. Whisk together. Add olive oil in a steady slow stream, whisking constantly.
