Spicy Tortilla Soup

3/4 cup chopped onion2 garlic cloves, minced1 tbsp. tomato paste1 tsp. ground cumin1 1/2 tsp. chili powdersalt and pepper to taste2 vegetable bouillon cubes, low fat (OR, 4 Cups of vegetable broth)4 tbsp. of chopped cilantro1 6 inch whole wheat tortilla (Weight Watchers is good). Cut it into 1/2 inch wide strips.1 1/2 cups chopped tomatoes (canned is fine)2/3 cup cooked black beans, well rinsed1 cup zucchini, chopped1 1/2 tbsp. chopped pickled jalapeno1 one second spray of vegetable oil cooking spray (Pam)*Optional: green pepper, frozen corn, lime juice. Adjust nutritional estimates accordingly.
Makes 5 1-cup servings.
Spray large pot with spray. Add onion and garlic. Cook over low heat, stirring, until almost tender. Stir in tomato paste, cumin and chili powder. Cook, stirring, for a few seconds. Then add broth (or veg cubes and water), tortilla and 2 tbsp. of cilantro. Bring to a boil, then reduce heat, cover and simmer for about 15 minutes.
Add tomatoes, black beans, zucchini and jalapeno. Cover, and simmer until zucchini is tender (about 5 minutes). taste, and add salt and pepper at this point if desired (but it's not necessary!)
Add remaining cilantro as garnish when serving.
Recipe can be easily doubled and freezes well, especially in single serving containers.
