Cinnamon Apple Yams Casserole

1/2 cup nonfat milk2 whole eggs, beaten1 tsp vanilla extractNutmeg, ground, 1 tspCinnamon, ground, 1 tspBrown Sugar, 1/4 cup unpackedYams in syrup, 40 oz can drainedCinnamon Applesauce, 25 oz jar (Clearly Organic Brand)Miniature Marshmellows, 1 1/2 cups
Preheat oven to 350
Mix first three ingredients in large bowl. In separate smaller bowl, mix the next three ingredients and add to liquids in large bowl, mix. Lastly add the yams and applesauce. Mix gently, mashing yams.
Scoop mixture into a large glass casserole dish and bake uncovered for 45 minutes.
Uncover, Sprinkle with marshmallows.
Bake uncovered 10-15 minutes until marshmallows are lightly browned.
Makes 12 1/2 cup servings
You can mix this the night before and stored covered in the refrigerator to save time on Thanksgiving day.
