Salmon Patties

Ingredients
1 can pink salmon2 tbsp Light Mayo2 tbsp fresh chopped cilantrojuice of 1 lime1 egg2 slices of melba toast crushed1 clove of garlic3 tbs parmesan cheese1/8-1/4 c. chopped onion
Directions
Drain Salmon and mix with all ingredients in small mixing bowl. Form 4 patties per batch. Place in hot skillet sprayed lightly with Pam.Cook until patties golden brown on each side. Serve on a layer of fresh spinach leaves with tomato slices as garnish. Makes 4-1 patty servings
