Vegetable Slice

Ingredients
1 cup grated zucchini1 cup grated carrot1 small onion grated1 stick celery chopped1 cup cheese gratedchopped mushroomschopped capsicum3/4 cup milkground pepper4 eggs
Directions
Chop or grate the vegetables. There should be 3 and a half cups of vegetables. Mix the vegetables with flour to coat. Mix the eggs, 3/4 cup of milk and 1/2 cup grated cheese. Add to vegetable mix and mix well. Pour into a well greased lamington tin sprinkle over pepper and 1/2 cup grated cheese. Bake at 200C for 30-35 minutes or until set and golden brown. Serve hot or cold. Makes 4 serves

    Have the slice cooking in the oven. Found the grated onion very watery as well as the zucchini - suggest that everyone squeeze the excess liquid out before cooking. I'll put a rating on once I've tasted it. Thank you. - 4/11/12
