Cynthia's Squash Casserole

Ingredients
1 cup Kraft 2% Shredded Cheddar Cheese4 medium squash, sliced1 medium Onion, chopped15 Reduced Fat Ritz Crackers1/2 Parkay Light Stick Margarine1/3 cup Skim Milk1 large EggSalt and Pepper to taste
Directions
Put sliced squash and chopped onion in boiler. Cover with water, add salt and pepper to taste and boil until tender. Drain. Add egg, cheese, crackers, margarine and milk to squash and mash until thick and soupy. Pour into casserole dish and bake at 350 degrees until brown on top.

Serving size is about half a cup
Makes about 8-10 servings.
