Chocolate Creme Brulee

Ingredients
1 cup heavy cream1/4 milk3.5 oz semi-sweet chocolate4 egg yolks4 teaspoons raw sugar
Directions
Warm cream and milk in double boiler, stirring constantly heat till just starting to bubble. Add chocolate and continue to stir until chocolate is melted.

Remove mixture from heat and place to the side. Wisk egg yolks vigorously and very slowly add the chocolate/dairy mix. If you add the eggs too fast you will have scrambled eggs in your chocolate.

Pour mixture into four small ramekin disk. Place ramekins in baking dish with water covering 1/3 of the ramekin. Bake for 30 minutes at 300F. Turn off heat and leave in the oven for an additional 50 minutes.

Brulee topping (Must be cool)

Add a teaspoon of raw sugar to the top of the brulee and use a brulee torch or similar torch to melt the sugar. The sugar will turn a little brown with a glossy appearance.

Allow to cool and serve.

Optional - add a teaspoon of mint to the brulee for a chocolate mint flavour.

    Thx, What! Try inst. coffee (dissolved in a splash of hot water) in the dairy -> mocha. Or just coffee (incr. sugar to taste) My fave is orange liqueur. When bruleed, garnish with a candied orange slice. For sugar, white is fine w the heavier flavours like choc. It's a good dark brulee that count - 10/30/12

    I have made this twice now with great results. I did not have a double boiler but was very attentive with a saucepan. Also, I found flavored creme brulee sugars to use as a topping. Thank you, this is a phenomenal recipe! - 6/5/10
