Turkey White Chili

2 cups chopped onion - approximately 2 medium onions2 tbs olive oil2 tsp cumin seeds or ground cumin1 tsp oregano1 large stalk celery, chopped5-6 cloves garlic, minced or put through a garlic press2 cans green chilis, rinsed and chopped2 cans white hominy, rinsed well to remove excess salt2 cups cooked turkey meat in bite-sized pieces (great with the last shreds picked from the carcass)2 cups turkey or chicken stock (low sodium preferred)2 cans small white beans (or black eyed peas, or canelli beans), rinsed well to remove excess saltSalt, black pepper, Tabasco Sauce (or other hot peppers) to taste
Chop approximately 2 cups of cooked turkey or chicken meat.
Heat olive oil in a heavy bottomed soup pot.
Saute onion, cumin and oregano until the onion is translucent over med-high heat
Add celery and garlic. Saute 2-3 minutes.
Add chopped green chilis. Saute 2-3 minutes.
Add the hominy, turkey, stock and half the white beans.
Mash the remaining white beans, then add to the pot.
Simmer for about 45 minutes.
Adjust spiciness with Tabasco and/or jalapenos
Adjust seasoning
Simmer for about 15 minutes.
