Lemon Meringue Pie with STEVIVA BLEND

Ingredients
CRUST1 1/4 cups graham wafer crumbs1 egg white1 tbsp butter, meltedFILLING1/2 cup STEVIVA1 1/2 cups water5 tbsp cornstarch1/2 cup lemon juice4 egg yolks1 tbsp butterMERINGUE4 egg whites1/4 tsp cream of tartar1/4 cup steviva
Directions
Combine crust ingredients and press into bottom of pie pan. Bake at 350 for 5-10 minutes.
Combine 1/2 cup steviva with water and cornstarch. Whisk together and cook over high heat, until thick. Take about 1/2 cup of mixture and blend with egg yolks. Return to pot and cook for a couple of minutes. Add lemon juice, remove from heat. Stir in butter. Pour over crust.
Beat egg whites until frothy. Add cream of tartar. Slowly add steviva and continue to beat until stiff peaks form. Pour over filling.
Put pie in oven and bake at 350 for approx ten minutes until merinque is lightly browned.
