Ingredients
Artichoke hearts quarteredtomato dicedextra virgin olive oilonionsgarlicwhole wheat spaghetti or other pastamozarella cheese or parmesan cheese
Directions
Boil pasta;

saute garlic and onions in olive oil; add artichoke hearts and tomatos in sauce pan until heated through.

serve over pasta with sprinkling of mozarella or parmesan cheese.

VERY High in fiber and satisfying lunch.
