Ingredients
fresh baby spinachfresh tomatofeta cheeseeggolive oilpepper black
Directions
Tear the spinach leaves and place in the skillet that has been oiled lightly with olive oil, beat the eggs and pour over the spinach evenly. Then top off the eggs with tomato and feta cheese , pepper to taste. Cover the skillet and let cook till egg is done. Can be served flat on a plate or folded.
