Cilantro Shrimp Couscous

Ingredients
5 large shrimp, cooked and diced in to bite size pieces1/3 C uncooked couscous1/2 C chicken broth1/2 can of petite diced tomatoes, liquid reserved1 tablespoon of chopped cilantro1 teaspoon lime juice1 teaspoon lime zest1 tablespoon extra virgin olive oilsalt and pepper to taste
Directions
Bring chicken broth and reserved tomato liquid (approximately 1/4 cup) to a boil in a medium saucepan. Stir in all remaining ingredients, cover, and remove from heat.

After 5 minutes, remove lid, fluff couscous with a fork, and enjoy!

    I modified this by using chicken, fresh tomato, no oil, and more cilantro. I might add a tad of oil next time after its cooked. It was very tasty, so thanks for the idea!! - 6/2/08

    This was great I used tomatoes with green chiles and used less olive oil, so mine was about 200 calories. I left out the lime also. I also add more cilantro because I love it. With the less oil it was a lot more healthy. I well fix this again. - 6/12/07
