Tee/s Creamy Vegan Potatoe Leek soup

Ingredients
2 lbs of Potatoes 2 Leeks2 Medium onions4c vegetable stock1c soy milk2Tbs Nutritional Yeastsalt and pepper to taste
Directions
chop all vegetables into 1 inch cubes, garlic you will want to cut smaller.

Put all (except 3 Tbsp) of vegetable stock and potatoes in a pan, bring to a boil and boil for about 10 minutes (you want them to be soft so you can mash them)

Put 3 Tbsp of the remaining stock into a pan - saute onions (about 3 minutes) add garlic saute for another 3 minutes add leeks and cook until they turn sweet (about 6 minutes)

Once the potatoes are soft mash them, add sauted veggies, soy milk, nutritional yeast and salt and pepper to taste.

Makes about 10-12 1-cup servings
