Whole Wheat Bran Muffins

Egg, fresh, 4 Buttermilk, 4 cup ( make my own using 4 TBSP vinegar and adding skim milk to make 4 cups)Margarine, soft, 1 cupBran Flakes Cereal, 4 cup Baking Soda, 9 tspGranulated Sugar, 1.50 cupWhole Wheat Flour, 5 cup Natural Wheat Bran, 2 cup - soaked in 2 cups of boiling water and allowed to cool
Cream sugar, margarine, eggs, bran and buttermilk. Mixture will be lumpy and margarine will not be incorporated. That is ok.
Add the dry ingredients. Add raisins, chocolate chips, etc. (2 cups).
Do not use the first day. Let sit in the fridge overnight or all day. Keeps for 1 month. Scoop 1/4 c. of mix into greased or lined muffin tin. Bake for 20-25 min and 350F.
