Velvety Broccoli and Feta Pasta

Ingredients
1 lb broccoli2 tbsp watersalt and pepperolive oil1/2 small onion or 2 shallots, minced3 cloves garlic, minced1/3 cup chopped flat parsley1 lemon, juiced1/2 cup feta1/4 cup water
Directions
Cut broccoli into small florets and steam. Season with salt and pepper. Heat a drizzle of olive oil in a large sauté pan. Cook the onion and garlic until it just begins to soften and then add the broccoli. Cook for several minutes until the onion is translucent. Add the parsley and cook until it is well wilted. Add lemon juice and simmer for 2 minutes.

Transfer to a blender and add 1/4 cup of the feta and 1/4 cup water. Purée until smooth, adding a drizzle of olive oil and a little more water if it sticks or lumps. Purée to desired consistency. Salt and pepper to taste. Serve with a good ridged pasta.
