Bourbon Balls

2 cups fine vanilla wafer (reduced fat)1 cup powdered (confectioner's) sugar1 cup finely ground pecans or walnuts3 tablespoons cocoa powder - Hershey's special dark3 tablespoons light or dark corn syrup1/4 cup bourbon or any whisky1/4 teaspoon cinnamon1/4 teaspoon ground nutmegCocoa and/or powdered sugar for coating
Toast pecans in oven @ 350 degree. cool and rough cut.
Combine the crumbs, sugar, nuts, cocoa, corn syrup, bourbon, cinnamon, and nutmeg in a mixing bowl and combine thoroughly. Roll into balls about 1 inch (2.5 cm) in diameter and roll in cocoa powder or powdered sugar to coat the outside. Store in an airtight container for at least one week, and up to three weeks.
You should be able to make 2.5 dozen balls. I seem to always make more. This batch I made 61, mine must be just a bit smaller than 1 inch.

so glad you enjoyed them. my brother is on gluten free diet. he loved the gluten free bourbon balls as well if you know anyone that might enjoy those.
