Suzy - Salmon in Phyllo Dough with Shallot Sauce

Ingredients
8 sheets phyllo dough1 lb of fresh salmon1 Tbsp dill, dried, chopped,1/4 cup butter3 Tbsp shallots, chopped1/3 cup white wine1 cup skim milk4 tsps flour
Directions
Salmon: Preheat oven to 375 degrees. Melt 1/4 cup butter. Lay out phyllo dough, 1 sheet at a time, and brush with butter. Alternatem sheet of dough, butter, sheet of dough...etc. Season salmon with dill and salt & pepper. Cut salmon into 4 servings of 4 oz peices. Cut the phyllo dough into fourths as well. Place a peice of salmon at the edge of a section of buttered phyllo dough and roll it up. Repeat with other 3 salmon fillets. Bake in oven at 375 degrees for 30 minutes.

Sauce: Bring 1/3 cup white wine and 3 Tbsp chopped shallots to a boil and simmer for 5 minutes. Combine 1 cup skim milk wiht 4 tsps of flour. Mix well, then add to shallot mixture. Continue to simmer until thickened. Salt & pepper to taste.

Combine: When salmon is finished baking pour shallot sauce on top then serve. Serving; 1 salmon fillet with 1/3 cup shallot sauce.
