Twenty minute Tofu-"chicken" parmesan

Firm or extra firm block of tofu, egg, seasoned bread crumbs, olive oil, tomato sauce, mozarella cheese, parmesan cheese, italian seasoning/parsley
1. Cut block of tofu into (4) 1/4" lengthwise slices.
2. Dip in egg and dread in bread crumbs to coat.
3. Heat olive oil in frying pan, add coated tofu and brown on both sides.
4. Add tomato sauce (seasoned w/orgegano, basil, onion, & garlic to tase) over tofu and heat until boiling.
5. Reduce heat, cover and simmer for 10 minutes.
6. Sprinkle with cheese (& parsley if desired); cover and simmer until cheese is melted.
