Rosemary Chicken

Ingredients
2 Tbsp Olive Oil2 cloves garlic1 Tbsp Rosemary1 Tsp each Salt and Pepper1/4 cup of White Wine, I like Chardonnay4 Chicken Breasts, (you can use any kind of chicken you have, just adjust the cooking time to make sure the chicken cooks through.)
Directions
Chop Garlic and Rosemary, set asside.
Put a heavy bottomed pan over medium heat, add olive oil and chicken. Do NOT stir, allow chicken to brown.
When Chicken is browned flip and add chopped garlic and rosemary, salt and pepper. Turn down the heat if necessary.
When the chicken is fully browned add white wine and allow to reduce, adding more wine if necessary.

serve over potatoes or broad noodles.

    Good flavor, easy and the kids ate it without complaining. Next time I'll add ingredients to flour and dredge chicken first though. Too much of the rosemary ended up in the bottom of the pan rather than on the meat. - 5/29/07
