Ham and Lentils

Ingredients
1- 6oz. Farmer John 97% Fat Free Ham Steak, Diced4 Slices Pepper Bacon, Chopped1 Bag Lentils1/2 Cup Onion, Diced2 Cups Carrots, Diced 1 1/2 Cups Celery, Diced2 Tsp Chicken Better Than Bouillon1 Tsp Beef Better Than Bouillon6 Cups Water1 Tbsp Cumin1 Tbsp Garlic1 Bay Leaf1/2 Tbsp Thyme
Directions
in a large pot cook bacon till crisp and remove. Add onions, celery and carrots to bacon fat and cook on medium 5 minutes till tender. Add ham to veggies cook 2 minutes then add remaining ingredients. Bring to a boil then reduce heat to low and simmer for 20-30 minutes till tender.
Can be served as is or over Rice.

    I loved this recipe. It was so flavorful. The only change I made was adding 1/2 of a red pepper and 1/2 of a green pepper that I had left over. Yummy! The only drawback is that the prep is a little time-consuming, but worth it. - 5/19/11
