Tuscany Minestrone Soup

1.5 cups dry bean assortment (small red and northern white beans) 1 tbsp olive oil1 onion chopped1 stalk celery chopped3 cloves garlic minced2 carrots peeled and sliced2 tbsp dried Italian herbs2 cups low sodium chicken broth 6 cups water.5 cup tomato sauce1 cup whole wheat elbow pasta (macaroni)
Sort, soak, precook and drain beans. Set aside.
Cook celery and onion in olive oil until onion is translucent.
Sprinkle on herbs. Add carrots and garlic. Continue stirring for 1 or 2 minutes.
Add beans, broth, water, tomato sauce and additional seasoning (to taste) and simmer for 90 minutes.
Add pasta and cook for an additional 10 minutes.
