Shrimp & Pepper Salad

8 oz. cooked shrimp1/2 cup green peppers, chopped1/2 cup red peppers, chopped1/2 cup yellow peppers, chopped1/2 cup onions, chopped1 tbsp olive oil1 tbsp cider vinegar1 tsp fancy dijon mustard1/4 cup parmesan cheese, grated
Chop green, red, and yellow peppers and onion.
Add cooked shrimp.
Make a dressing with the olive oil, vinegar, and dijon mustard.
Toss salad with dressing.
Grate fresh parmesan cheese over just prior to serving.

I haven't made it, but it sounds pretty good. I think I'd saute the veggies and shrimp in just a touch of oil and spices and then put it on a bed of spinach with a fat free dressing. I'm amazed at the "bad" ratings just because someone doesn't like peppers. Don't eat it if you don't like them! - 1/4/11

I made this tonight for dinner and was disappointed.There really wasn't much flavor (even used 1/4 more dressing than called for). Maybe if I had marinated the ingredients overnight, there would have been more flavor. I'll try it again but, a day ahead of when I plan on eating it. We'll see. - 3/12/10
