Curry Tofu Scramble

Ingredients
1/8 a block of tofu (make sure to press between paper towels to release any water.)1/2 small onion chopped1 garlic clove, crushed1/4 tsp. extra virgin olive oil1 c (a handful) of spinach (steamed, if not frozen)1/4 tsp curry powderdash salt and pepper
Directions
In a small frying pan heat olive oil.
Add chopped onion and garlic- saute until softened.

Add curry powder and then crumble and add tofu.
cook for 4-5 minutes.
Add spinach and heat until wilted.

Taste and adjust seasonings for preference. Enjoy :)

Serves one person. Can be served aside of rice or quinoa, in a tortilla, or any other nutritional and yummy way you can think up!
