ED'S Black Bean Soup

2 Cans (15oz) Bush's Black Beans drained and rinsed1 Can (4 oz) Green Chiles2 medium Onions chopped1 Green Bell Pepper Chopped about 1 1/2 cups1/4 cup Olive Oil6 cloves garlic chopped2 Quarts Chicken Broth fat free4 Andouille Chicken Sausage2 tsp Cayenne powder2 tsp Oregano ground2 tsp cumin ground
Serves 10, serving size 1 cup
Ina large stock pot , bring stock, beans, and chilies to a boil. Simmer for 30 minutes covered. Add sausage, simmer, covered for 30 minutes. In a seperate pan saute onions and pepper in the olive oil. Add the vegetables and the spices and simmer for another 30 minutes.
If desired garnish with sour cream and scallions.
