Yummy Blueberry Snack Cakes

2 cups all purpose flour1.5 cups splenda0.5 cups I cant believe its not butter, regular1 tsp. baking powder1 cup 1% milk2 eggs, seperated2 cups fresh or frozen blueberries
In a mixing bowl, combine flour and sugar. Cut in the I cant believe its not butter until crumbly. Set aside 1/4 cup for topping. Add the baking powder, milk and egg yolks to remaining mixture, mix well. Beat egg whites unitl soft peaks form; fold into batter.
Pour into greased 13 in x 9 in baking dish. Sprinkle with blueberries and reserved crumb mixture. Bake at 350 degrees for 30-35 minutes or until golden brown and a toothpick inserted near the center comes out clean.
Yields: 15-18 servings (nutrition calculated with 16 servings)
**Note: If using frozen blueberries, DO NOT thaw first!!**
