Asparagus and Shiitake Mushroom Sandwich

- fresh asparagus (6 small spears)- shiitake mushrooms (3 medium-sized pieces)- garlic (3 cloves)- extra virgin olive oil (1 tbsp or less)- for extra taste, herbs are optional (e.g., thyme, marjoram, rosemary, basil)- whole wheat bread (2 slices)
1. Chop garlic, cut asparagus spears in half, and slice shiitake mushrooms into thin strips. You may add more of these ingredients if you wish.
2. Put EVOO in a medium-heated pan and add the garlic. Throw in the mushrooms shortly thereafter.
3. Add the asparagus and your favorite herbs to taste. Stir-fry until your vegetables are done.
4. Place the asparagus mixture in between two pieces of whole wheat bread.
This sandwich-for-one is easy to prepare and truly delectable. Simply multiply each ingredient accordingly to make more sandwiches for guests and loved-ones.
