Squash Sweet Potato Soup

2 Sweet Potatos, peeled and sliced1 small butternut squash peeled and cubed2 carrotts dicedsmall red pepper, cubed1 onion dicedsalt and pepper to taste1 tbs minced garlic3 cups progresso reduced sodium chicken broth
Saute onions and peppers in melted butter over medium heat until onions are soft. Add diced veggies and garlic, stir and sautee for about 5 minutes. Add chicken broth, bring to a boil and reduce heat. Cook until vegtables are soft, about 25 minutes. Finally, puree in pot or mash. Top with parmasean cheese if desired.
