Cindy's Green Bean & Mushroom Saute

Ingredients
1 lb fresh green beans, washed and snapped1 shallot, sliced into rings or chopped1 pint sliced mushrooms1 T extra virgin olive oil1 T unsalted butter2 T fat free, reduced sodium chicken brothsalt & pepper to taste
Directions
Wash green beans, snap ends. Blanch in boiling salted water for 5 minutes, remove and drain. In large saute pan, add extra virgin olive oil, heat, add mushrooms and shallots, saute 5 minutes on medium/high heat to brown up and carmelize a bit. Add green beans and chicken stock, turn heat to medium until stock reduced by half, about a minute. Add butter and salt and pepper, turn to coat green beans in the "sauce". Serve immediately.

    Very light and yummy! Served as one of my veggies for Easter dinner when I was looking for something besides the Green Bean Casserole. Much healthier. Will be adding additional shallots next time (used 2 this time) for more flavor. - 4/26/11

    I used white wine and had no schalloten and added crushed almonds...in theory, they should have been delicious, but I found they tasted bland. I think the beans might have been too old...although, my hubby ate them all! - 5/28/10
