Ground Turkey Fried Rice

Ingredients
3 Tbsp EVOO16 oz ground turkey (or chicken)1.5 C diced carrots1.5 C diced celery8 C steamed rice5 Tbsp Indonesian Soy Sauce
Directions
Cook rice. Meanwhile, dice carrots and celery. Add oil to wok and cook ground turkey until no longer pink (About 7 to 10 minutes) . Add vegetables and fry until tender (about 5 minutes). Add cooked rice and soy sauce and mix well.
Serve. Makes 20 1/2 cup servings.
