Mexican Wedding Cookies

Ingredients
1 cup unsalted butter, room temperature1/2 cup powdered sugar1 tsp vanilla extract1 3/4 cup flour1 cup nuts (pecans are traditionally used)Additional powdered sugar to roll them in
Directions
Cream butter and sugar, then add vanilla. Slowly add flour, and then nuts. You can use any type of nut you like, pecans are traditionally used. Bake at 275 degrees for 40 minutes. Roll in powdered sugar when slightly cooled.

    If unsalted butter is used, there needs to be at least some extra salt added to the recipe. We've always used salted butter for this recipe. - 12/16/18

    Very nice cookies. I used 1 1/2 cup ground pecans instead of 1. Like most wedding cookies, the first layer of powdered sugar gets sticky and clumpy, so I re-rolled them after they were fully cool. - 8/5/13
