Ada's Apple Latkes

Egg, fresh, 2 large, well beatenRice milk, 1.5 cupUnbleached White Whole Wheat Flour, 2 cupBaking Powder, 1 tspKosher Salt, dashSugar In The Raw, .25 to .5 cup, to tasteApples, fresh, 3 medium, coarsely gratedCoconut oil, 1 teaspoonConfectioner's Sugar, 1 tablespoon, to taste
Mix beaten eggs with rice milk. (Can use cow's milk or orange juice instead of rice milk, calories not calculated.) In a separate bowl, combine flour, baking powder, salt and sugar. Grate the apple (I used organic apples and did not peel them. You may want to peel yours, first), adding a couple of drops of lemon juice to keep them from turning brown. Add the dry ingredients to the egg mixture, then add the grated apples. Heat a tiny amount of coconut oil in a skillet. Drop batter by rounded tablespoons and cook over medium-high heat until light brown on both sides. Sprinkle lightly with powdered sugar and serve warm. Yields approximately 36-40 small latkes.

This recipe could be modified with eggbeaters and spenda. Also, why coconut oil? - 12/17/09

You can always modify with eggwhites or eggbeaters. I don't use splenda because it's chemically-created, but you can feel free to use what you like. I use organic, non-chemically refined coconut oil because it's a much healthier oil than chemically-created canola or vegetable oil.
