Low Carb Crab Cakes

10 oz crab1 package pork rinds 3 eggscayenne pepper (dash)salt and pepper2 celery stalks, dicedmushrooms dicedbrcolli dicedMix all together, form into patties and cook slowly in oil.
Start with the porkrinds and put them into a food processor, they are going to be your breading. If you don't have a food processor, you can put them in a freezer bag and beat the heck out of them with a can... I do this on days that I need the release :)
dice all of the veggies (I switch up the veggies depending on what is in the fridge, everytime time I I make this it's different).
Mix crab, veggies and spices. Put in pork rinds and eggs and mix by hand. Form into patties.
You can either bake these @ 350 until golden, fry in a pan with olive oil, or deep fry. OF course the deep fried is the most delicious, but not the best option for health.
